  • Whole wheat dough for making two thin rotis
  • 1 egg
  • 1 small onion, chopped

  • 1/4 tsp red chilli powder

Double layered egg paratha recipe

First, we will prepare the egg stuffing for the paratha. Break the egg and add all the chopped onion, all the spices, cilantro, and salt. Whisk the egg lightly until the ingredients get mixed.

Do not over whisk as the egg will become thin. Keep aside and keep the tawa for heating up. Keep it on low heat, and while it heats, roll out two thin rotis.

Dust your hands with some dry flour, and take half the dough and roll into a ball. Then dunk in the dry flour and roll it out into a thin round roti with a rolling pin.

Dust more dry flour if needed. Roll out the second roti to the same size. Check if the tawa is hot by smearing a little dough on it. It should start browning immediately.

When the tawa is hot, spread a little ghee over it. Now place one roti over it and spread the egg mixture over it.
Ensure you do not spread the mixture too close to the edges.

Then place the other roti over this and seal around the edges by pressing lightly with the fingers. Once this is done, loosen the paratha and flip it over carefully.

Spread a little desi ghee on this side as well. Press the edges of the paratha with the flipper. It will seal the edges firmly as well as cook the paratha.

Flip the paratha and spread some ghee on this side too. Keep flipping the paratha and pressing on the edges frequently until the paratha is crisp and browned nicely on both sides.

Pressing on the sides will ensure the edges do not remain undercooked as the paratha will puff up in the middle as the egg gets cooked.

When the paratha is crisp and brown on both sides and has puffed up, indicating the egg is cooked, remove the paratha and serve.

Serve the stuffed egg paratha with pickle or raita. Now our delicious and yummy Egg Paratha is ready. Share this recipe with your friends.
