Litti Chokha: How to make Litti Chokha – Litti Chokha recipe | Indian style

Welcome to Anupma’s kitchen. Today we are going to learn how to make Litti Chokha which is a very famous Indian dish.

How to make Litti Chokha?

Ingredients for Chokha preparation:

  • One – Large eggplant
  • Two – Potatoes
  • Four – Tomatoes
  • One – Medium size chopped Onion
  • Some chopped fresh Cilantro
  • Two tbsp – Mustard oil
  • Salt to taste

Ingredients for dough preparation:

  • Two cups – Whole wheat flour
  • 1/4 tsp – Salt
  • 1 and 1/2 cup – Water

Ingredients for stuffing of Litti:

  • Half cup – Roasted chana dall
  • 1/4 tsp – Whole cumin
  • 1/4 tsp – Crushed pepper (black pepper)
  • Some chopped cilantro
  • One tbsp – Garlic- green chilli paste
  • One – Chopped onion
  • One tbsp – Stuffed red chili pickle
  • Half tbsp – Mango pickle
  • Half tsp – Carom and onion seeds mix together
  • Two tbsp –  Mustard oil
  • Salt to taste
  • Two tbsp – lemon juice

How to make Chokha?

We have taken one large eggplant, Two potatoes, and 4 Tomatoes. We will roast them on broil in the oven. Roast the eggplant for 25 minutes, potatoes for 10 minutes, and tomatoes for five minutes.

After roasting it, peel off the skin and take it in a mixing bowl. Now we will mash everything up. We will use a fork or a knife to chop everything up because it’s very hot.

After settling in for five minutes, we will add some more ingredients to it and make chokha. Now we will add one medium-sized chopped Onion, some chopped fresh cilantro, and 2 tbsp of mustard oil.

If you don’t have mustard oil, you can take olive oil also. Salt to taste. Now it’s time to do some upper body exercise, that’s smashing.

Let’s mash everything up. It will look colorful, and it tastes awesome too. So we’re going to mix it up nicely and keep it aside.

How to make dough for Litti?

For the dough preparation, we will take 2 cups of whole wheat flour. To that, we will be adding 1/4 a teaspoon of salt, 1 and 1/2 cup of water to make a smooth, soft dough for the Litty.

The dough should be soft but not sticky, So be careful. Now we will keep it aside for 10 minutes or till the stuffing is ready.

How to make stuffing for Litti?

Traditionally the stuffing is prepared with sattu, which is the main ingredient. If you don’t have the sattu, use roasted chana dal that’s daliyaa, which is easily available in any Indian grocery store.

So we are going to grind this to a fine powder consistency. Before that, we will be adding 1/4 teaspoon of whole cumin and1/4 a teaspoon of crushed pepper (black pepper).

Now we will grind it. We will add chopped cilantro, one tablespoon of garlic-green chili paste, one chopped Onion, and one tablespoon of stuffed red chili pickle to this mixture.

If you don’t have this, you can use any other pickle too. Also, take mango pickle, 1/2 a teaspoon of carom and onion seeds mix, two tablespoons of mustard oil, salt to taste, and two tablespoons of lemon juice.

Now we are going to mix everything. It smells incredible. Here we will use our fingers to mix everything because we want to feel the texture of stuffing. When it’s all mixed up, the stuffing is ready, and we will stuff it in the dough.

We will take a lemon sized portion of the dough, and we are going to make a small hole in the center.

Now we will start this with 2 to 3 tbsp of the stuffing which we prepared earlier. Take both the ends, pinch it together to seal the sides. You can see that all the sides have been sealed, and it’s all ready to be baked.

Repeat the process for remaining dough. Put all in a tray. Please place it in the oven and bake it for 35 minutes on 450 degrees Fahrenheit but keep turning the dumplings.

After it is baked, apply ghee or clarified butter on it. It will be looking nice and shiny. Enjoy it with the chokha. The delicious Litti Chokha is ready. Share it with your family and friends.

If you want the fried version of it, that’s also called sattu kachauri, that is how it’s done. It is also my husband’s favorite. You’re going to repeat the same process.

Stuff the stuffing in the dough, seal it, and roll it like a ball. Prepare it ina shape like chapati. We are going to heat four cups of oil on high heat to fry our kachauris. Put it in the oil.

Be careful as the oil will be too hot. Fry it for two minutes on each side on high heat. When it is puffed up, it’s all done and ready to serve.
