Hello friends. Welcome to Anupma’s Kitchen. Here we will learn how to make a Mutton Paya recipe by two methods. As the winter season is approaching, Mutton Paya soup and curry is loved very much.
Mutton Paya soup recipe
Ingredients for Mutton Pay (Goat Trotters) soup recipe:
- 1 – Tbsp Ghee
- One – Small pc of Cinnamon
- 1 – Clove
- 5-6 – Black peppercorns
- 2 – Garlic bulbs
- Small piece of Ginger
- 2-3 – Pcs of green chili
- Pinch of Turmeric
- 1 – Paya / Goat Trotter
- Black pepper powder
- Some Coriander
- 1 – Tsp Lemon juice
Here we will learn how to make Mutton Paya soup (Goat trotters soup). It is a typical winter recipe and very healthy. This soup is highly nutritious and strengthens the bones as it is full of calcium.
Mutton Paya soup is recommended for Arthritis/bone problems. This soup is very beneficial for senior citizens with bone issues. Put ghee in a cooker. We are using pure ghee as it is useful to us.
You can use oil instead. Adjust spiciness as per your taste. Add the ingredients in the cooker and saute everything for a minute at low flame. Make sure onions don’t change color.
Mix everything properly. Remember not to use a high flame. Add the trotters and add water, which is 3/4th liter. After mixing everything, the more it is cooked at low flame, the tastier it will be. Stir once.
Cook first at high flame up to 1 whistle and then cook for 20-25 minutes at low flame. Make sure to cook slowly at low flame; only then will they be tender.
After 20-25 minutes, turn off the flame and let the pressure be released. Mutton Paya soup is ready. The trotters are tender. If the trotters are not cooked properly, then cook again in the cooker.
Strain the soup, add the Paya pieces in the soup, and discard the other things. Turn on the flame and cook the soup again. We have used one Paya here, which consists of 2 feet bones.
If you feel there is excess water, then boil it and reduce the level. Otherwise, add some more water and cook. Lower the flame, add some pepper powder while serving.
Mix everything once. Turn off the flame. Paya soup is perfectly ready.
Mutton Paya curry recipe
Ingredients required for Mutton Paya curry:
- 4 pcs – Mutton Paya (Goat Trotters)
- ¼ Cup – Wheat Flour
- 4 – Cloves
- 1 – Small stick Cinnamon
- 1 – Black Cardamom
- 2 – Green Cardamoms
- 3 – Bay Leaves
- 2 – Onions Sliced
- Salt to Taste
- 2 tbsp – Ginger Garlic paste
- 1 tbsp – Coriander powder
- ½ tsp – Turmeric powder
- 1 tsp – Cumin powder
- Garnish with Ginger Julienne and Green chilli bits
First of all, let us see how to clean the trotters. Here we have taken four trotters. Add 1/4th cup of wheat flour, mix well and coat the trotters. I have washed the trotters initially.
Let them lie for 10 to 15 minutes. After 15 minutes have passed, let us clean the trotters. Rub them nicely. If there is any hair left, you can clean them. If you want, you can scrape them with the help of a knife.
This way, we will clean them all and wash them thoroughly with water. Let us prepare the spices now. We will first fry them in oil—heat half a cup oil in a pressure cooker. Add the spices.
Fry them for half a minute. Here we have used two big onions and have sliced them. Fry them till golden brown. Let me give you a tip of advice.
Sometimes we feel that the onions remain RAW. Please make sure that the onions are not dark brown. We will cook them till they are light golden brown. Now we will add the trotters.
We have drained the trotters, and there is no water left in them. Fry them nicely on a high flame for 2 to 3 minutes. When the trotters are fried well, we can smell the pleasant aroma.
Now lower the flame. Fry them nicely on a low flame. Do not increase the flame; otherwise, the spices will burn.
Add three tablespoons of water. Cook them on high flame now. We will add one more tablespoon of water. This way, we will fry them nicely.
We have cooked them for 7 to 8 minutes by adding little by little water. You can observe that everything has been cooked very well. Now we will add water. We have added 600 ml of water.
We will add 1-liter water to it. Keep the flame on high. We will make a thin gravy. The gravy in this recipe has to be liquid, not thick. After closing the lid, we will cook them on a high flame till one whistle.
After that, we will boil them for 10 to 12 minutes on the low flame. Then we will check them. The time taken to cook trotters varies according to the size of the trotter’s.
If the trotters are big, it takes a longer time to cook. Here we have used a small trotter. That is why, after 10 to 12 minutes, we will open the lid and check.
After around 15 minutes have passed, let’s check the trotters. You can observe the trotters have cooked very nicely. You can see they are very soft.
We have to be careful that the meat does not separate from the bone. We need to keep a very liquid kind of gravy, and it should not be thick.
If you want more gravy, you can add more water. Now we will garnish with some bits of green chillies and ginger julienne.
