Welcome to Anupma’s kitchen. Here we will learn about how to make Mutton Seekh Kabab differently.

Ingredients required to make Mutton Seekh Kabab:-

  1. Mutton / Goat Meat – 1 Kg
  2. Onion – 5
  3. Clarified Butter / Ghee – 150 ml
  4. 1 Pinch of Saffron diluted in milk
  5. Ginger – 30 gm
  6. Curd – 100 ml
  7. Salt – 2 tbsp
  8. Lime Juice – 1 tbsp
  9. Cardamom Stick – 2
  10. Cloves – 2
  11. Elaichi Powder – 1 pinch
  12. Mathania Red Chilli Paste – 2.5 tbsp

Mutton Seekh Kabab recipe

Let’s start to make a very new and different recipe Roasted Seekh Kebab made by using mutton. We will make roasted so that we can eat it with a stick as a snack.

Use a stick and eat with it only. We will keep ready the sticks with meat over it before the preparation start. Here we are also using Mathania Red Chilli Powder, which I have got from a village named Mathania near Jodhpur in India.

First of all, take a heavy bottom pan. We will heat it for a while and evaporate even a little bit of water left over it.

After this, we will be adding Clarified Butter and let the butter heat for 1-2 mins. When the butter is well heated, we will add onions to it.

Do it slowly and also add cinnamon stick, cloves & shredded ginger. Now we will cook onions properly and make it golden brown. When the onions are golden brown, we will add meat sticks to it.

People eat roasted meat with hands, so it sticks to hand. Therefore we are making it with sticks. Stir it very slowly and try not to remove sticks from the meat.

We have to keep this in mind, so do it very slowly. Another way is to do it as the meat releases water; we will cover the lid for some time on full heat and look after 5-6 mins.

After 10-15 mins have elapsed, you will observe that the meat is well fried in clarified butter. Stir it with very soft hands so that the sticks don’t break. Do it very slowly.

Now we will add Lime – 2 tbsp and sugar 1 tbsp. Next, I have Mathania Red Chilli, which belongs to the village named Mathania near Jodhpur. It will double the taste of mutton.

You will see that the color is perfect, and the taste is just unique. Next, add salt and cardamom powder. Now we will cook it. To cook, we will add a little water.

We will add one bowl of water. Keep the heat on full. Mathania Red Chilli gives a very different color. Now we will cover the lid for 10 mins and stir in between for 1-2 times.

After approx 20 mins have elapsed, I have stirred it two times by slowly doing it so that stick doesn’t break. The cooking is well done now.

The first time we fried in Clarified Butter, we cooked with adding water the second time. Now you will observe that the meat is tender.

We will cook this for one more time, adding the last ingredient curd—now no need to add water separately by adding a bit of curd water.

We will cook for one more time since we are making roasted meat; that’s why the gravy must cook tenderly and adequately.

We will cover it again for 10-15 mins and stir in between so that gravy doesn’t stick to the bottom. To cook the second time, we added curd, we have stirred it for 1-2 times.

Go at the bottom with soft hands so that the sticks don’t break. After it we will add saffron with milk, and our Roasted Seekh Kebab is almost ready.

Now we will keep it for 5-10 mins cover the lid. Now our Mutton seekh kabab is ready to serve.
